Instructions

Coat the sirloin steak evenly with this marinade. Cover and refrigerate for at least 30 minutes and up to 4 hours to enhance flavor and tenderness.
- Make Tzatziki: In a small bowl, mix together 1 cup plain Greek yogurt, ½ grated cucumber (squeezed to remove excess moisture), 1 tablespoon fresh lemon juice, 1 minced garlic clove, 1 tablespoon chopped fresh dill, and salt and pepper to taste. Chill the tzatziki in the refrigerator to allow the flavors to meld.
- Make Dressing: Whisk together 3 tablespoons olive oil, 2 tablespoons fresh lemon juice, 1 teaspoon honey (omit if following Whole30), 1 minced garlic clove, ½ teaspoon dried oregano, and salt and pepper to taste in a small bowl until well combined.
- Cook Steak: Heat a heavy skillet over high heat. Remove the steak from the marinade, letting excess drip off. Sear the steak for 4–5 minutes on each side until it reaches desired doneness. Remove from heat and let it rest for about 5 minutes to retain juices, then slice thinly thin against the grain.
