Mushroom Rice with French Onion and Parmesan Recipe

  • Author: Rafael
  • Total Time: 1 hour 10 minutes
  • Yield: 4 servings 1x

Description

This comforting Mushroom Rice recipe combines long grain white rice with flavorful French onion soup, beef consommé, and fresh mushrooms, baked to perfection with sliced butter and finished with a sprinkle of Parmesan cheese. It’s an easy-to-make side dish that can also be turned into a hearty meal by adding cooked diced chicken.

Ingredients

Scale

Main Ingredients

  • 1 cup uncooked long grain white rice
  • 10 ounce can condensed French onion soup
  • 10 ounce can beef consommé
  • 8 ounces fresh button or cremini mushrooms, sliced thin
  • 1/4 cup butter, cut into several slices
  • 1 teaspoon Worcestershire sauce
  • 3 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Prepare the oven and baking dish: Preheat your oven to 425 degrees Fahrenheit. Lightly coat an 8×8-inch baking dish with nonstick cooking spray to prevent sticking.
  2. Combine ingredients: In the prepared baking dish, mix together the uncooked long grain white rice, condensed French onion soup, beef consommé, sliced mushrooms, and Worcestershire sauce until evenly combined.
  3. Add butter: Evenly distribute the slices of butter over the top of the rice mixture. This will melt during baking to create a rich flavor and texture.
  4. Cover and bake: Tightly cover the baking dish with aluminum foil to lock in moisture. Place it in the preheated oven and bake for 40 minutes.
  5. Uncover and add cheese: Remove the foil carefully, then sprinkle the grated Parmesan cheese evenly over the top of the rice mixture.
  6. Bake uncovered: Return the baking dish to the oven without the foil and bake for an additional 20 minutes. This allows the cheese to melt and the top to brown slightly.
  7. Rest and serve: Remove the dish from the oven and let it stand for 2 to 3 minutes. Fluff the rice gently with a fork before serving. Enjoy your Mushroom Rice as a delicious side dish or add cooked diced chicken to make it a complete meal.

Notes

  • For a more substantial meal, stir in some cooked diced chicken at the end before serving.
  • If you prefer, substitute beef consommé with vegetable broth for a slightly lighter flavor.
  • Ensure the baking dish is tightly covered with foil to allow proper steaming and cooking of the rice.
  • Use freshly grated Parmesan cheese for the best melt and flavor.
