Scale
Brownie Layer
- 1 cup almond flour
- 1 tsp vanilla extract
- 1/3 cup flax meal
- 1/2 cup runny almond butter
- 1 cup medjool dates, pitted
- 1/2 cup cocoa powder
- 1/4 cup dairy-free milk (add more if needed)
Caramel Cookie Dough Layer
- 1 cup medjool dates, pitted
- 1 tsp vanilla extract or paste
- 1/3 cup runny nut butter (almond or cashew)
- 1/3 cup dairy-free milk
- Pinch of sea salt
- 1/3 cup chocolate chips
Instructions
- Make the Brownie Layer: Add the almond flour, vanilla extract, flax meal, almond butter, medjool dates, cocoa powder, and 1/4 cup dairy-free milk to a food processor. Blend until the mixture is smooth and starts to form a thick dough. If the mixture is too dry, add a splash more milk until it holds together well.
- Press into Pan: Line a bread loaf pan with parchment paper. Press the brownie dough evenly into the pan, smoothing out the top with a spatula to create a uniform base layer.
- Make the Caramel Cookie Dough: In a blender or food processor, add the medjool dates, vanilla extract, runny nut butter, dairy-free milk, and a pinch of sea salt. Blend until smooth and creamy. If needed, add a splash more milk to reach a thick but spreadable consistency.
- Fold in Chocolate Chips: Transfer the caramel mixture to a bowl and gently fold in the chocolate chips until evenly distributed throughout the dough.
- Assemble and Freeze: Spread the caramel cookie dough layer evenly over the brownie base in the pan. Place the pan in the freezer for several hours or until fully set and firm.
- Slice and Enjoy: Once firm, remove from the freezer and use the parchment paper to lift the brownies out of the pan. Cut into squares and serve chilled. Store any leftovers in the freezer or fridge for a chewy, healthy treat.
Notes
- Use medjool dates as they provide natural sweetness and a soft texture.
- Adjust dairy-free milk quantity gradually to control dough consistency.
- Store brownies in an airtight container in the freezer for up to 2 weeks.
- Can substitute almond butter with other nut butters like cashew or peanut.
- Ensure to line your pan with parchment paper to easily remove the brownies once set.
