  • 1/2 cup mini M&Ms
  • 4 tablespoons mini chocolate chips

Wet Ingredients

  • 1 cup melted creamy peanut butter
  • 6 tablespoons honey
  • 4 tablespoons coconut oil
  • 2 teaspoons vanilla extract

Instructions

  1. Blend: In a blender, blend the rolled oats and lightly salted peanuts until they are ground and resemble a fine flour.
  2. Combine: Transfer the blended oat and peanut mixture to a food processor. (If you prefer, you can skip this step and mix by hand, but the food processor helps create a smooth consistency.)
  3. Melt: In a microwave-safe bowl, combine the creamy peanut butter, coconut oil, honey, vanilla extract, and salt. Microwave for 30 seconds to 1 minute until melted, then whisk together until smooth.
  4. Toss: Pour the peanut butter and honey mixture into the food processor and process until the mixture comes together and forms a dough-like consistency.
  5. Mix: Add the mini chocolate chips, mini M&Ms, and 2 tablespoons of quick oats to the dough and mix well to evenly distribute the mix-ins.
  6. Shape: Using a small ice cream scoop or your hands, form the mixture into 1-inch balls. Place the energy balls on a tray and refrigerate for 30 minutes to set.
