Olive and Cheese Mixture

  • 1/2 cup Kalamata olives, roughly chopped
  • 1/2 cup green olives, roughly chopped
  • 1/2 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare the pan: Preheat the oven to 350°F (175°C). Generously grease a standard bundt pan with butter to prevent sticking and to enhance flavor.
  2. Cut and season the biscuits: Separate the refrigerated biscuits and cut each biscuit into four quarters. Place all the biscuit pieces into a large bowl. Toss these pieces with the melted butter and olive oil until evenly coated. Then, sprinkle dried oregano and garlic powder over the dough and toss again to combine the seasoning thoroughly.
  3. Prepare olive and cheese mixture: In a small bowl, combine the chopped Kalamata olives, chopped green olives, and crumbled feta cheese. Toss gently to mix the ingredients evenly.
  4. Assemble the monkey bread – first layer: Sprinkle a thin layer of the olive and feta mixture evenly on the bottom of the prepared bundt pan.
  5. Add the dough and cheese layers: Place about one-third of the seasoned biscuit pieces over the olive layer in the pan. Then sprinkle some of the olive mixture over the dough, followed by half of the shredded mozzarella cheese. Repeat layering with another third of the dough, remaining olive mixture, and the rest of the mozzarella cheese. Finish with the last third of the dough on top.
  6. Bake covered: Cover the bundt pan tightly with aluminum foil to retain moisture during baking. Bake in the preheated oven for 45 minutes.
  7. Bake uncovered to brown: Remove the foil and continue baking for an additional 5 to 10 minutes until the monkey bread is golden brown and cooked through.
  8. Cool and serve: Let the monkey bread cool in the pan for 5 to 10 minutes. Carefully invert the bundt pan onto a serving plate to release the bread. Serve warm and enjoy the pull-apart savory treat.
