  • Author: Rafael
  • Total Time: 20 minutes
  • Yield: 2 servings 1x
  • Diet: Vegan

Description

This One Pan Creamy Sun-Dried Tomato Pasta is a delicious and easy vegan meal that combines al dente spaghetti with a rich, creamy sauce made from oat cream, vegan butter, and vegan cheeses, enhanced by tangy sun-dried tomatoes and fragrant Italian seasoning. It’s a perfect quick dinner option that requires minimal cleanup.

Ingredients

Scale

Ingredients

  • 2 tbsp vegan butter
  • 200 g spaghetti
  • 1 tsp Italian seasoning
  • 50 g sun-dried tomatoes, roughly chopped
  • 480 ml low sodium vegetable broth
  • 120 ml oat cream or any plant-based cream
  • 2 tbsp vegan cream cheese
  • 2 tbsp vegan parmesan
  • Extra vegan parmesan for garnish
  • Fresh basil leaves for garnish

Instructions

  1. Build the base: Melt the vegan butter in a large pan over medium heat. Lay the spaghetti flat in the pan, breaking it in half if necessary to fit. Sprinkle the Italian seasoning evenly over the pasta, then scatter the chopped sun-dried tomatoes on top.
  2. Add broth and cover: Pour the low sodium vegetable broth over the pasta evenly. Cover the pan with a lid and let it cook for 5 minutes to allow the pasta to absorb the broth and start cooking.
  3. Make it creamy: Remove the lid and add oat cream, vegan cream cheese, and vegan parmesan. Stir the mixture well to combine all the ingredients. Continue cooking uncovered, stirring frequently so the pasta cooks evenly and the sauce thickens to coat every strand. Cook until the spaghetti reaches al dente texture.
  4. Serve: Plate the pasta and finish by sprinkling extra vegan parmesan on top and garnishing with fresh basil leaves for added flavor and freshness.

Notes

  • Breaking the spaghetti in half helps it fit into the pan and cook evenly.
  • Use low sodium vegetable broth to control the saltiness of the dish.
  • You can substitute oat cream with any other vegan cream alternative like soy or cashew cream.
  • Stir frequently when making the sauce creamy to prevent sticking and ensure even coating.
  • Extra vegan parmesan and fresh basil add a nice finishing touch and fresh flavor to the dish.
