Instructions

  1. Season Chicken: Generously season both sides of the boneless, skinless chicken breasts with Cajun seasoning, ensuring each piece is evenly coated.
  2. Cook Chicken: Heat a splash of olive oil in a large pot or deep skillet over medium heat. Once hot, add the seasoned chicken breasts and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the pot and set aside.
  3. Sauté Vegetables: In the same pot, add a bit more olive oil if needed. Toss in the chopped bell peppers and sauté for 2-3 minutes until they begin to soften. Add minced garlic and cook for another minute until fragrant.
  4. Add Orzo: Stir in the orzo pasta, mixing it with the sautéed vegetables to coat the grains evenly.
  5. Cook Orzo: Pour in the chicken broth and bring the mixture to a boil. Reduce heat to a simmer and cover the pot. Let it cook for 10-12 minutes, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed.
  6. Make Alfredo Sauce: Once the orzo is cooked, stir in the heavy cream and freshly grated Parmesan cheese. Mix well until the cheese melts and the sauce becomes creamy. If the sauce is too thick, add a splash more chicken broth. Adjust seasoning with more Cajun seasoning if desired.
  7. Combine and Finish: Slice the cooked chicken breasts and nestle the slices back into the pot. Add the fresh spinach and stir gently until it wilts. Serve the dish hot, garnished with extra Parmesan cheese and optionally a sprinkle of fresh parsley.
