  • 1 23.5 oz jar marinara sauce

  • 1 32 oz container beef bone broth (or beef broth)
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • 6 lasagna noodles, broken into pieces (Mueller brand recommended)
  • 1 cup 2% cottage cheese (Good Culture brand recommended; whole milk cottage cheese also works)

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the finely chopped onion and minced garlic, cooking for 3 to 4 minutes until softened and fragrant, being careful not to brown the garlic.
  2. Brown Ground Beef: Add the lean ground beef to the pot. Cook, breaking it up with a spoon, until browned and fully cooked through.
  3. Add Liquids and Seasonings: Stir in the marinara sauce, diced tomatoes, beef bone broth, onion powder, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Mix well to combine all ingredients.
  4. Simmer the Soup: Cover the pot and reduce the heat to low. Let the soup simmer for 15 to 60 minutes, allowing flavors to meld and deepen.
  5. Cook Lasagna Noodles: Break the lasagna noodles into small pieces and add them directly to the pot. Continue cooking the soup for about 30 minutes until the noodles are tender and cooked through.
  6. Blend Cottage Cheese: While the noodles cook, blend the cottage cheese in a food processor or blender until smooth to emulate the creamy texture of ricotta cheese.
  7. Finish and Serve: Stir the smooth cottage cheese into the soup just before serving. Serve warm and optionally garnish with fresh basil or shredded mozzarella cheese.
