Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper and lightly coat it with cooking oil spray to prevent sticking.
  2. Mix Ingredients: In a large mixing bowl, combine the fresh orange juice with pulp, self-rising flour, olive oil, and plant-based milk. Add the brown sugar, vanilla extract, and cinnamon to enhance flavor. Stir with a rubber spatula to begin combining.
  3. Form Dough: Knead the mixture by hand until it forms a dough ball. If the dough feels too sticky, sprinkle in a bit more flour; if it’s too dry, add more orange juice or plant-based milk gradually.
  4. Shape Dough: Place the dough on a lightly floured surface. Roll it out into a thick, approximately 8-inch round disc.
  5. Cut Scones: Using a sharp knife, cut the dough disc into 8 even triangular pieces.
  6. Prepare for Baking: Spread the triangles apart on the prepared baking sheet, leaving about a thumb’s width between each to allow for expansion during baking.
  7. Brush Tops: Lightly brush the tops of each scone with some plant-based milk to encourage a golden brown color.
