Instructions

  1. Prepare Paleo Bread Cubes: Slice a paleo loaf bread into small cubes until you have 2 1/2 cups. Place the cubes on a baking sheet, drizzle lightly with olive oil, and bake at 250°F (120°C) for 30 minutes to 1 hour until toasted and dry.
  2. Heat Herb Stock Mixture: In a saucepan or pot, combine butter (or your chosen substitute), vegetable or chicken stock, chopped thyme leaves, ground sage, sea salt, and pepper. Heat gently to a low boil for about 5 minutes, then remove from heat to infuse flavors.
  3. Combine Vegetables and Bread Cubes: Dice the onion, celery stalks, and carrot. Place these diced vegetables into a large pot with the toasted bread cubes.
  4. Mix in Heated Liquid: Slowly pour the warm butter-herb stock mixture over the bread cubes and vegetables, stirring gently but thoroughly to combine all ingredients evenly.
  5. Let Stuffing Rest: Cover the pot containing the stuffing and allow it to sit undisturbed for 15 minutes. This resting period lets the bread absorb the flavorful liquid, bringing the stuffing together.
