  • Author: Rafael
  • Total Time: 30 minutes
  • Yield: 12-16 bites 1x

Description

Pistachio Crusted Brie Bites with Cranberry Honey Glaze are elegant, bite-sized appetizers featuring creamy brie wrapped in flaky puff pastry, topped with crunchy pistachios and a sweet-tart cranberry honey glaze. Perfect for holiday parties, gatherings, or anytime you want a sophisticated yet simple treat.

Ingredients

Scale

Cheese and Pastry

  • 8 oz (225g) brie cheese, cut into bite-sized cubes
  • 1 sheet puff pastry, thawed and cut into small squares
  • 1 egg, beaten (for egg wash)

Toppings and Glaze

  • ¼ cup shelled pistachios, finely chopped
  • ¼ cup cranberry sauce or fresh cranberries, chopped
  • 2 tbsp honey
  • Fresh thyme or rosemary for garnish (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Assemble the bites: Place the puff pastry squares on the prepared baking sheet. Center a cube of brie cheese on each square.
  3. Fold and brush: Fold the corners of the puff pastry over the brie cubes, partially covering them. Brush the exposed pastry with the beaten egg to give a golden finish when baked.
  4. Add pistachios: Sprinkle the finely chopped pistachios evenly over the top of the partially folded pastry for a crunchy, nutty crust.
  5. Bake: Bake the assembled bites in the oven for 12–15 minutes or until the puff pastry is golden brown and puffed up.
  6. Prepare the glaze: While the bites bake, combine the cranberry sauce and honey in a small saucepan. Heat gently over low heat, stirring occasionally, until the mixture is warm and slightly thickened.
  7. Glaze and garnish: Once the brie bites are out of the oven, drizzle the warm cranberry honey glaze over them. Garnish with fresh thyme or rosemary sprigs if desired for added aroma and color.
  8. Serve: Serve the pistachio crusted brie bites immediately while warm and melty for the best experience.

Notes

  • Ensure puff pastry is fully thawed before using for easier handling and better puff.
  • You can substitute cranberries with raspberry or another tart berry for the glaze.
  • For a vegan version, substitute brie with a plant-based cheese and use a milk wash instead of egg.
  • These bites are best served fresh but can be prepared a few hours ahead and gently reheated.
