Description

A delicious and quick breakfast recipe combining eggs with a crispy cheese base and savory pizza-inspired toppings including passata, salami, and herbs. Perfect for a low-fat, high-protein start to your day.

Ingredients

Scale

Egg Mixture

  • 3 eggs

Cheese Base and Toppings

  • 60g (approx. 2 oz) reduced-fat cheese, grated
  • 1 tbsp passata (about 15g)
  • A few slices of salami (approx. 20g)
  • Mixed herbs, to top

Instructions

  1. Melt cheese base: In a non-stick frying pan over medium heat, sprinkle half the grated cheese evenly across the pan. Allow it to melt and slightly crisp to form a flavorful cheese crust.
  2. Whisk eggs: While the cheese is melting, crack the eggs into a bowl and whisk them until smooth and homogenous.
  3. Cook eggs: Pour the whisked eggs over the melted cheese base. Cover the pan with a lid and cook until the bottom is set, firm, and golden in color.
  4. Flip: Carefully use a spatula to flip the egg and cheese base to cook the other side.
  5. Add toppings: Spread the passata evenly on the cooked side, place the salami slices on top, and sprinkle with the remaining grated cheese. Cover the pan again until the cheese melts and toppings are heated through.
  6. Serve: Remove the pizza eggs from the pan, sprinkle with mixed herbs for freshness and extra flavor, and enjoy immediately while hot.

Notes

  • Use a non-stick pan to prevent the cheese and eggs from sticking and to facilitate flipping.
  • Reduced-fat cheese keeps the dish lower in fat while still providing great flavor and texture.
  • Adjust the quantity of salami according to your preference or substitute with a vegetarian option if desired.
  • Covering the pan helps cook the eggs evenly and melts the cheese perfectly.
  • This recipe can be served with a side salad or toast for a more complete meal.
  • Ensure the pan is at medium heat to avoid burning the cheese or eggs.
