  • Yield: 9 mini waffles or 4 regular-sized waffles 1x

These Protein Waffles are a delicious and nutritious breakfast option, packed with vanilla whey protein powder and cottage cheese for added protein. Sweetened naturally with maple syrup and flavored with vanilla extract, these waffles offer a fluffy texture and a satisfying start to your day.

Ingredients

Scale

Wet Ingredients

  • 2 large eggs
  • 1 cup cottage cheese
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 scoops vanilla whey protein powder (34g by weight per scoop)

Dry Ingredients

  • ½ cup all purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt

Other

  • Cooking spray

Instructions

  1. Blend wet ingredients: In a blender, combine the 2 large eggs, 1 cup cottage cheese, 2 tbsp maple syrup, 1 tsp vanilla extract, and 2 scoops vanilla whey protein powder. Blend until the mixture is smooth and well incorporated.
  2. Mix dry ingredients: In a separate bowl, whisk together ½ cup all purpose flour, 2 tsp baking powder, and ¼ tsp salt until evenly combined.
  3. Combine batter: Gently fold the dry ingredient mixture into the wet mixture using a spatula. Mix until just combined, leaving some small lumps to keep the batter light and airy.
  4. Preheat waffle iron: Allow the batter to rest for a few minutes while you preheat your waffle iron.
  5. Prepare waffle iron: Spray the waffle iron with cooking spray to prevent sticking. Pour batter onto the center—use about ¼ cup for mini waffles or ½ cup for full-size waffles.
  6. Cook waffles: Close the waffle iron and allow the waffle to cook completely until golden and cooked through. Then carefully remove the waffle.
  7. Repeat process: Spray the waffle iron again before cooking each additional waffle and continue until all the batter has been used.
  8. Serving yield: This recipe makes approximately 9 mini waffles or 4 regular-sized waffles.

Notes

  • Spray the waffle iron before cooking each waffle to prevent sticking.
  • Letting the batter rest before cooking helps create fluffier waffles.
  • Use a spatula to fold the dry ingredients into the wet mixture gently to avoid overmixing.
  • You can substitute maple syrup with honey or another natural sweetener if preferred.
  • For gluten-free options, replace all-purpose flour with a gluten-free flour blend.
