Ingredients
Scale
Wet Ingredients
- 2 large eggs
- 1 cup cottage cheese
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 2 scoops vanilla whey protein powder (34g by weight per scoop)
Dry Ingredients
- ½ cup all purpose flour
- 2 tsp baking powder
- ¼ tsp salt
Other
- Cooking spray
Instructions
- Blend wet ingredients: In a blender, combine the 2 large eggs, 1 cup cottage cheese, 2 tbsp maple syrup, 1 tsp vanilla extract, and 2 scoops vanilla whey protein powder. Blend until the mixture is smooth and well incorporated.
- Mix dry ingredients: In a separate bowl, whisk together ½ cup all purpose flour, 2 tsp baking powder, and ¼ tsp salt until evenly combined.
- Combine batter: Gently fold the dry ingredient mixture into the wet mixture using a spatula. Mix until just combined, leaving some small lumps to keep the batter light and airy.
- Preheat waffle iron: Allow the batter to rest for a few minutes while you preheat your waffle iron.
- Prepare waffle iron: Spray the waffle iron with cooking spray to prevent sticking. Pour batter onto the center—use about ¼ cup for mini waffles or ½ cup for full-size waffles.
- Cook waffles: Close the waffle iron and allow the waffle to cook completely until golden and cooked through. Then carefully remove the waffle.
- Repeat process: Spray the waffle iron again before cooking each additional waffle and continue until all the batter has been used.
- Serving yield: This recipe makes approximately 9 mini waffles or 4 regular-sized waffles.
Notes
- Spray the waffle iron before cooking each waffle to prevent sticking.
- Letting the batter rest before cooking helps create fluffier waffles.
- Use a spatula to fold the dry ingredients into the wet mixture gently to avoid overmixing.
- You can substitute maple syrup with honey or another natural sweetener if preferred.
- For gluten-free options, replace all-purpose flour with a gluten-free flour blend.
