Instructions
- Preheat Oven: Set your oven to 350°F (177°C) to prepare for baking the cookies.
- Prepare Dough: In a large bowl, use an electric mixer to beat the vegan butter and granulated sugar together until the mixture becomes fluffy. Then, add almond and vanilla extracts. Gradually add the all-purpose flour in ½ cup increments, mixing thoroughly each time until the dough is well combined and smooth.
- Shape Cookies: Drop the dough by tablespoons onto a lightly greased baking pan. For larger cookies, use 2 tablespoons per ball. Press your thumb gently into the center of each dough ball to create a small indentation.
- Add Filling and Top: Spoon a small amount of the raspberry preserves into each thumbprint indentation. Place one semi-sweet vegan chocolate chip on top of the jam in each cookie.
- Bake: Bake the cookies in the preheated oven for 15 minutes until the edges are lightly golden.
- Cool: Remove the cookies from the oven and let them cool on the pan for 30 minutes before serving to allow them to set properly.
