  • Author: Rafael
  • Total Time: 45 minutes
  • Yield: Approximately 24 large cookies 1x
  • Diet: Vegan

Description

These Raspberry Jam Thumbprint Cookies are delightful vegan treats featuring a soft, buttery base with a sweet dollop of raspberry preserves in the center, topped with a semi-sweet vegan chocolate chip for an extra burst of flavor. Perfect for sharing or as a cozy homemade snack.

Ingredients

Scale

Cookie Base

  • 1 cup of vegan butter (at room temperature)
  • ⅔ cup of granulated sugar
  • 1 teaspoon of almond extract
  • 1 teaspoon of vanilla extract
  • 2 cups of all-purpose flour

Toppings

  • ½ cup of fruit preserves (raspberry preferred, but any flavor works)
  • Handful of semi-sweet vegan chocolate chips (such as Guittard or Trader Joe’s)

Instructions

  1. Preheat Oven: Set your oven to 350°F (177°C) to prepare for baking the cookies.
  2. Prepare Dough: In a large bowl, use an electric mixer to beat the vegan butter and granulated sugar together until the mixture becomes fluffy. Then, add almond and vanilla extracts. Gradually add the all-purpose flour in ½ cup increments, mixing thoroughly each time until the dough is well combined and smooth.
  3. Shape Cookies: Drop the dough by tablespoons onto a lightly greased baking pan. For larger cookies, use 2 tablespoons per ball. Press your thumb gently into the center of each dough ball to create a small indentation.
  4. Add Filling and Top: Spoon a small amount of the raspberry preserves into each thumbprint indentation. Place one semi-sweet vegan chocolate chip on top of the jam in each cookie.
  5. Bake: Bake the cookies in the preheated oven for 15 minutes until the edges are lightly golden.
  6. Cool: Remove the cookies from the oven and let them cool on the pan for 30 minutes before serving to allow them to set properly.

Notes

  • Ensure the vegan butter is at room temperature for easier mixing and better texture.
  • Feel free to substitute raspberry preserves with other fruit jams like strawberry or apricot for different flavors.
  • Use high-quality vegan chocolate chips for the best taste and texture.
  • Cookies can be stored in an airtight container at room temperature for up to 5 days.
  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend, adjusting as necessary.
