  • Cracked pepper, to taste
  • Red pepper flakes, to serve
  • 1 batch raw marinara sauce
  • Almond Parmesan (optional, for topping)

Instructions

  1. Prepare Vegetable Noodles: Spiralize the zucchini and cucumber using a spiralizer or julienne them by hand to create raw vegetable noodles. Set aside.
  2. Prep Veggies: Dice the mushrooms, bell peppers, carrots, and slice the scallions according to your preference.
  3. Assemble: Combine the spiralized noodles and diced vegetables in a large bowl, mixing well. You can also assemble directly on individual plates if preferred.
  4. Add Flavor: Top the mixed noodles and vegetables with fresh herbs such as basil or parsley. Season with mineral salt, cracked black pepper to taste, and sprinkle red pepper flakes as desired for heat.
