Ingredients

Scale

Protein

  • 2 chicken breasts, diced

Vegetables & Aromatics

  • 1 green bell pepper, sliced thinly
  • 1 red bell pepper, sliced thinly
  • 2 cloves garlic, minced

Sauces & Seasonings

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1/2 tsp chili flakes (optional)
  • 1 tsp cornstarch + 2 tbsp water (for slurry)

Carbohydrates

  • 1 cup cooked jasmine rice

Garnish

  • Sesame seeds (for garnish)
  • Sliced green onions (for garnish)

Instructions

  1. Cook the chicken: Heat a skillet or wok over medium-high heat. Add 1 tablespoon of sesame oil. Stir-fry the diced chicken for 5-6 minutes until golden and cooked through. Remove and set aside.
  2. Sauté garlic and peppers: In the same skillet, sauté the minced garlic for about 30 seconds until fragrant. Add the sliced green and red bell peppers and stir-fry for 3-4 minutes until tender-crisp.
  3. Combine chicken and sauces: Return the chicken to the skillet. Add soy sauce, oyster sauce, and chili flakes (if using). Stir well to coat the chicken and peppers evenly.
  4. Create and add slurry: Mix 1 teaspoon of cornstarch with 2 tablespoons of water to make a slurry. Add this to the skillet and cook for 2-3 minutes until the sauce thickens to a glossy consistency.
  5. Serve and garnish: Serve the stir-fry over a bed of steamed jasmine rice. Garnish with sesame seeds and sliced green onions before serving for added flavor and crunch.

Notes

  • For a spicier dish, increase the amount of chili flakes or add fresh sliced chili peppers.
  • You can substitute chicken breasts with thigh meat for a juicier texture.
  • To keep vegetables crisp, avoid overcooking; stir-fry quickly on high heat.
  • Use low-sodium soy sauce to reduce the salt content in the dish.
  • Prepared jasmine rice can be steamed or instant rice can be used for convenience.
