Slow Cooker Liquids and Herbs
- 2 cups beef broth
- 1 cup dry white wine (or extra beef broth)
- 1 tsp fresh thyme (or ½ tsp dried thyme)
- 1 tsp fresh rosemary (or ½ tsp dried rosemary)
- 2 bay leaves
- 2 tsp Worcestershire sauce

Instructions
- Prepare the Roast: Pat the chuck roast dry using paper towels to remove excess moisture. Season generously on all sides with salt and black pepper to enhance flavor.
- Sear the Roast: Heat olive oil in a skillet over medium-high heat. Once hot, sear the chuck roast for 2 to 3 minutes per side until it develops a rich brown crust, locking in juices and flavor.
- Prepare the Onions: In the same skillet, add the thinly sliced onions and sauté for 5 to 6 minutes until they start to soften and become translucent. Add the minced garlic and tomato paste, cooking for an additional 1 to 2 minutes until fragrant and the tomato paste darkens slightly.
- Assemble in Slow Cooker: Place the seared chuck roast in the slow cooker. Pour the onion, garlic, and tomato paste mixture evenly over the roast. Add the beef broth, dry white wine (or extra broth), fresh or dried thyme, rosemary, bay leaves, and Worcestershire sauce to the slow cooker.
- Cook: Cover the slow cooker and cook on low heat for 7 to 8 hours or on high heat for 4 to 5 hours. The roast should become tender and easily shred with a fork.
- Finish & Serve: Carefully remove the roast from the slow cooker and let it rest for 10 minutes to redistribute juices. Remove the bay leaves from the slow cooker sauce. Slice or shred the meat as desired, then spoon the rich onion sauce over the top. Garnish with freshly chopped parsley before serving.
