Instructions

  1. Prepare Ingredients: Dice the white onion and carrots, and mince the garlic cloves. Chop the baby spinach and set aside.
  2. Combine in Slow Cooker: In a large slow cooker, add the diced onion, carrots, minced garlic, Italian seasoning, salt, pepper, frozen meatballs, and chicken broth. Stir gently to combine all ingredients.
  3. Cook Soup: Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours, allowing the flavors to meld and the meatballs to cook thoroughly.
  4. Add Pasta: About 20 minutes before serving, stir in the acini de pepe pasta. Cover and continue cooking for the remaining 20 minutes until the pasta is tender.
  5. Stir in Spinach: Add the chopped baby spinach to the soup, stirring until the spinach is wilted and fully incorporated.
