- 1 pound lean ground beef

Instructions
- Cook Ground Beef and Onions: Heat a large skillet over medium-high heat. Add the lean ground beef and finely chopped onions. Cook for 6-7 minutes, breaking apart the beef with a spoon until it is no longer pink and the onions are soft. Drain any excess grease from the pan.
- Add Tomato Paste and Garlic: Stir in the tomato paste and minced garlic into the beef mixture. Cook for 1-2 minutes until the garlic becomes fragrant.
- Combine Ingredients in Slow Cooker: In the base of a slow cooker, pour in diced tomatoes, tomato sauce, and chicken broth. Add the cooked beef mixture along with 1 tablespoon Italian seasoning. Stir everything to combine. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- Cook Lasagna Noodles in Soup: After the soup has finished cooking, stir in broken lasagna noodles. Cover and let the noodles cook in the hot soup for about 30 minutes until tender.
- Prepare Cheese Topping: While the noodles cook, mix together ricotta cheese, shredded mozzarella, grated Parmesan, and 1 teaspoon Italian seasoning until well combined.
