Ingredients
Scale
Meat and Seasoning
- 3 pounds chuck roast
- 4 tablespoons SPG seasoning (salt, black pepper, garlic powder blend)
- 1 cup beef broth
Buns and Cheese
- 2 packages Sweet Slider Buns
- 8 slices sharp cheddar cheese
Sauce and Vegetables
- ½ cup BBQ sauce
- 1 large white onion
Other
- Avocado oil, for frying onions
- Garlic butter, for brushing buns
Instructions
- Preheat the smoker: Set your smoker to 275°F and prepare hickory wood for smoking to infuse your roast with a bold, smoky flavor.
- Season the chuck roast: Rub the chuck roast evenly on all sides with the SPG seasoning mixture of salt, black pepper, and garlic powder.
- Smoke the roast: Place the seasoned chuck roast on the smoker rack at 275°F and smoke it for 5 hours. Every hour, spritz the meat with barrel-aged beer to keep it moist and enhance flavor.
- Wrap and continue smoking: After 5 hours, wrap the roast tightly in aluminum foil and return it to the smoker for an additional 2 hours to further tenderize.
- Check doneness: Use a meat thermometer to ensure the internal temperature reaches 205°F, indicating the roast is tender and ready. Remove from smoker.
- Rest and shred the beef: Let the roast rest for 2 hours inside a cooler to retain juices, then shred the beef into bite-sized pieces.
- Cook the onions: Thinly slice the large white onion. Heat avocado oil in a pan over medium heat and cook the onions for 5-7 minutes until softened and translucent.
- Assemble the sliders: Place the bottom halves of the slider buns in an aluminum foil pan. Layer 4 slices of sharp cheddar cheese first, followed by the shredded beef, ½ cup BBQ sauce, and the cooked onions. Then add the remaining 4 slices of cheddar cheese on top. Place the top buns on the sliders and brush them with garlic butter.
- Bake the sliders: Preheat your oven to 350°F. Bake the assembled sliders for 15-20 minutes until the cheese melts beautifully and the buns are warmed through.
- Serve: Slice the sliders individually and serve hot, enjoying the melty cheese and smoky beef flavors.
Notes
- Using hickory wood adds a pronounced smoky flavor that complements the beef perfectly.
- Spritzing with barrel-aged beer keeps the roast moist throughout the smoking process.
- The 2-hour rest in a cooler allows the juices to redistribute, making the beef easier to shred and more tender.
- Frying onions in avocado oil adds a mild flavor and soft texture without overpowering the sliders.
- Garlic butter brushed on the buns adds an extra layer of savory richness when baked.
- You can prepare the smoked beef a day ahead and assemble the sliders just before baking for convenience.
- Leftover sliders keep well refrigerated and can be reheated gently in the oven to preserve texture.
