Instructions

  1. Preheat Smoker: Preheat your smoker to 225° F using a combination of hickory, cherry, and oak wood chips to create a balanced smoke flavor that will infuse the chicken.
  2. Season Chicken: Drizzle olive oil evenly over the chicken breasts. Season all sides thoroughly with the SPG blend to impart a savory, garlicky crust while smoking.
  3. Smoke Chicken: Place the chicken breasts on the smoker rack and smoke at 225° F for about 45 minutes, or until the internal temperature reaches 165° F, ensuring juicy and tender meat with a smoky aroma.
  4. Parboil Pasta: Meanwhile, bring a large pot of salted water to a boil. Add the fettuccini noodles and cook for 6 minutes to parboil. Drain and immediately run cold water over them to stop the cooking process, keeping them firm for tossing in the sauce.
