Instructions
- Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to the package instructions until al dente. Before draining, reserve about 1/2 cup of the pasta cooking water to help in finishing the sauce.
- Sauté the Garlic and Red Pepper Flakes: While the pasta cooks, heat the extra virgin olive oil in a large skillet over medium heat. Add the thinly sliced garlic and sauté carefully for about 1-2 minutes until it turns golden brown but not burnt. Stir in the red pepper flakes to infuse the oil with a mild spicy kick.
- Combine the Pasta and Sauce: Once the garlic is golden and fragrant, add the drained pasta to the skillet. Toss well to coat every strand in the garlic and oil mixture. If the pasta looks dry, add a little of the reserved pasta water to loosen the sauce and help it cling better.
- Finishing Touches: Remove from heat and toss in the chopped parsley to add freshness. Sprinkle grated Parmesan cheese on top if desired. Give everything a final gentle toss and serve immediately for the best flavor and texture.
