Instructions
- Heat the Oil: Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering.
- Brown the Beef: Add the cubed beef chuck and brown on all sides to develop a rich flavor, then remove the beef from the pot and set aside.
- Sauté Vegetables: In the same pot, add chopped onion, minced garlic, and diced red bell pepper. Cook until the onion is translucent and the vegetables are softened.
- Add Ingredients Back: Return the browned beef to the pot. Add sliced carrots, cubed potatoes, canned tomatoes, beef broth, smoked paprika, and the bay leaf.
- Simmer the Stew: Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer gently for 1.5 to 2 hours or until the beef is tender and the flavors meld together.
- Season and Serve: Remove the bay leaf, season the stew with salt and pepper to taste, stir well, and serve hot for a comforting meal.
