Description

This Spicy Creamy Cajun Corn Cob recipe features perfectly grilled corn slathered in a zesty, creamy Cajun sauce made with mayonnaise, sour cream, and a blend of spices, topped with crumbled feta or cotija cheese, fresh cilantro, and a hint of lime. It’s a deliciously smoky and tangy side dish perfect for summer barbecues or any meal where you want to add a flavorful twist to corn on the cob.

Ingredients

Scale

Corn and Seasoning

  • 4 ears corn, husked
  • 2 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Cajun Cream Sauce

  • 4 tablespoons mayonnaise (vegan or regular)
  • 80 millilitres sour cream or Mexican crema
  • 1.5 teaspoons Cajun seasoning
  • 1.5 teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Toppings

  • 1 tablespoon fresh cilantro, finely chopped
  • 60 grams feta or cotija cheese, crumbled
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chipotle powder or chili powder (optional)

Instructions

  1. Preheat Grill: Preheat your grill to medium-high heat to prepare it for roasting the corn. This temperature will ensure the corn cooks evenly and develops a nice char.
  2. Season Corn: Brush each ear of corn evenly with olive oil, then season all sides with salt and freshly ground black pepper to enhance the flavor.
  3. Grill Corn: Place the seasoned corn directly on the grill grates. Cook for 10 to 15 minutes, turning occasionally until the kernels are tender and have a charred, smoky appearance.
  4. Prepare Cajun Cream Sauce: In a mixing bowl, whisk together mayonnaise, sour cream, Cajun seasoning, smoked paprika, onion powder, and garlic powder until the mixture is smooth and well combined.
  5. Coat Grilled Corn: Remove the grilled corn from the heat and immediately brush each ear generously with the prepared Cajun cream sauce to let the flavors soak in while the corn is hot.
  6. Apply Toppings: Sprinkle crumbled feta or cotija cheese over the coated corn, add finely chopped fresh cilantro, drizzle fresh lime juice on top, and optionally dust with chipotle or chili powder for extra heat.
  7. Serve: Serve the spicy creamy Cajun corn cob immediately while warm for the best flavor and texture experience.

Notes

  • For a vegan option, use vegan mayonnaise and a dairy-free sour cream alternative, and omit the cheese or use a vegan cheese substitute.
  • If you don’t have a grill, you can roast the corn in the oven at 400°F (200°C) for 20-25 minutes, turning occasionally.
  • Adjust the amount of Cajun seasoning and chipotle powder based on your preferred spice level.
  • Fresh lime juice adds brightness but can be omitted if unavailable.
  • Leftover Cajun cream sauce can be stored in the refrigerator for up to 3 days.
