  • 12 Colossal shrimp, thawed
  • 1 bag frozen peas and carrots
  • 4 cups day-old cooked rice
  • 1 large yellow onion, diced
  • 4 large eggs
  • 1 bunch green onions, chopped (for garnish)
  • 4 tbsp butter

Seasonings

  • 1 tbsp Cajun seasoning (for shrimp)
  • 2 tbsp SPG blend (Salt, Pepper, Garlic) (for steak)
  • 1/4 cup Bachan’s Original seasoning (for steak)

Yum Yum Sauce Ingredients

  • 1 cup mayonnaise
  • 1/4 cup water
  • 2 tbsp ketchup
  • 1 tsp sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika

Instructions

  1. Prepare the Steak: Cube 1-2 pounds of partially frozen ribeye into bite-sized pieces. Season the steak cubes generously with Bachan’s Original and the SPG blend for enhanced flavor.
  2. Season the Shrimp: Season the thawed colossal shrimp with Cajun seasoning to add a spicy kick.
  3. Make Yum Yum Sauce: In a small bowl, combine 1 cup mayonnaise, 1/4 cup water, 2 tablespoons ketchup, 1 teaspoon sugar, 1/2 teaspoon garlic powder, and 1/2 teaspoon smoked paprika. Mix until smooth and refrigerate until serving.
  4. Cook the Steak: Preheat a LoCo griddle or similar flat top cooking surface to 450°F. Cook the seasoned steak cubes for 5 minutes, stirring occasionally to sear evenly. Remove the steak once cooked to desired doneness.
  5. Cook the Shrimp: On the same griddle or pan, cook the seasoned shrimp for 2 minutes per side until pink and opaque. Remove and set aside with the steak.
  6. Sauté Vegetables: Add the diced yellow onion and frozen peas and carrots to the griddle. Cook for 5-7 minutes, stirring occasionally, until the onion becomes translucent and the vegetables are heated through.
  7. Add Rice and Butter: Incorporate the 4 cups of day-old cooked rice and 4 tablespoons of butter into the vegetable mixture. Stir well to combine and evenly coat the rice with butter.
  8. Scramble Eggs into Rice: Push the rice mixture to one side and scramble the 4 large eggs on the griddle. Once cooked, mix the scrambled eggs thoroughly into the fried rice until well blended.
  9. Combine and Serve: Top the fried rice with the cooked steak and shrimp. Garnish with chopped green onions if desired. Serve immediately with the homemade yum yum sauce on the side for dipping or drizzling.

Notes

  • Using day-old rice ensures the fried rice doesn’t become mushy and fries better.
  • The LoCo griddle can be substituted with a large skillet or wok heated to a high temperature.
