Instructions
- Activate yeast: Pour the warm 2% milk into the bowl of a stand mixer and sprinkle the instant dry yeast over the top. Let it sit for 2-3 minutes to activate and become frothy.
- Combine wet ingredients: Add the two room-temperature eggs, melted (but not hot) salted butter, salt, and granulated sugar to the yeast mixture. Mix gently to combine.
- Add flour and rest: Stir in 4 cups of the all-purpose flour using the beater blade until the ingredients are barely combined. Let the mixture rest for 5 minutes so the flour absorbs the liquid.
- Knead the dough: Replace the beater blade with the dough hook. Knead on medium speed for 5-7 minutes, gradually adding up to 1/2 cup additional flour as needed, until the dough becomes elastic, smooth, and slightly tacky without being too sticky.
