Instructions

  1. Preheat the oven: Set your oven to its lowest possible temperature, typically around 170°F (77°C), preparing it for the slow baking process essential to drying the fruit puree into leather.
  2. Blend the fruit mixture: Combine the hulled strawberries, peeled and diced honeycrisp apple, honey, and lemon juice in a blender. Blend until the mixture is completely smooth with no visible seeds, ensuring a uniform texture for the fruit leather.
  3. Prepare the baking sheet: Optionally, soak a piece of parchment paper in water for 1-2 minutes, then dry it with a kitchen towel before placing it onto a rimmed 13×18-inch baking sheet. This wetting technique helps the fruit leather stick better and creates a classic peel-away texture. Alternatively, use a Silpat mat if preferred.
  4. Spread the fruit puree: Pour about 90% of the blended strawberry mixture onto the center of the baking sheet. Using a spatula, spread it evenly outward toward the edges, making the sides slightly thicker than the center. This prevents the edges from drying out too quickly compared to the middle, ensuring even dehydration.
  5. Create the blue swirl (optional): Mix the remaining 10% of the strawberry puree with blue spirulina powder or blueberries/blackberries. Blend or whisk to combine. Then, gently swirl this blue mixture on top of the red fruit layer using a chopstick or knife. First, make outward lines from the center, then swirl in circular patterns to create a tie-dye effect.
