Filling

- 2 tablespoons uncooked oatmeal

- Pinch of ground cloves
- ½ teaspoon kosher salt (or ¼ teaspoon table salt)

- 1 cup boiling water
Instructions
- Prepare the apples: Preheat your oven to 375°F. Carefully remove the core and stem of each apple using an apple corer, melon baller, or paring knife, ensuring the bottom of the apple remains intact to hold the filling.
- Make the filling: In a bowl, combine brown sugar, uncooked oatmeal, chopped walnuts, raisins, cinnamon, nutmeg, ground cloves, and kosher salt. Mix well to evenly distribute the spices and sugar.
- Stuff the apples: Pack the filling mixture into the hollowed-out apples, pressing lightly to fill them completely. You may have some filling left over depending on apple size; save it for another use or stuff another apple if desired. Top each stuffed apple with half a tablespoon of vegan margarine if using.
- Bake the apples: Place the stuffed apples in a baking dish (an 8×8 inch Pyrex dish works well). Pour 1 cup of boiling water into the dish around the apples to create steam and keep them moist during baking. Cover the dish loosely with aluminum foil.
- Bake covered: Bake the apples in the preheated oven for 20 minutes with the foil on. This steams and softens the apples initially.
- Bake uncovered: Remove the foil carefully and continue baking for another 20 minutes. This allows the apples and filling to brown and caramelize slightly.
- Cool and serve: Remove the apples from the oven, transfer to plates, and let them cool for 5-10 minutes before serving. You may cover them again with foil and let rest for up to 30 minutes if desired.
Notes
- If you don’t have an apple corer, a paring knife or melon baller can be used, but be very careful to avoid cutting through the bottom of the apple.
- Using boiling water in the baking dish helps keep the fruit moist and prevents drying out.
- Vegan margarine is optional but enhances flavor and helps brown the filling.
- Store any extra filling in an airtight container for another use, such as topping oatmeal or yogurt.
