Scale

Salad Ingredients

  • 2 cups diced cucumber
  • 1 1/2 cups strawberries, sliced into rounds
  • 2 cups cubed watermelon
  • 1/2 cup crumbled feta cheese (vegan or regular)
  • Optional: 1 jalapeño, thinly sliced
  • Fresh mint leaves for garnish

Dressing Ingredients

  • 1 1/2 tbsp honey or agave nectar
  • 1 tbsp freshly squeezed lime juice
  • 1 tsp lime zest
  • 1/2 tbsp finely chopped fresh mint
  • Pinch of salt

Instructions

  1. Prepare the fruits and vegetables: Dice the cucumbers, slice the strawberries into rounds, and cube the watermelon. Place all these prepared ingredients into a large mixing bowl.
  2. Make the dressing: In a smaller bowl, whisk together honey or agave nectar, freshly squeezed lime juice, lime zest, finely chopped mint, and a pinch of salt until well combined.
  3. Toss the salad: Pour the dressing over the cucumber, strawberry, and watermelon mixture. Gently toss to coat all ingredients evenly with the dressing.
  4. Chill and serve: For best flavor, optionally chill the salad in the refrigerator for one hour before serving. Just before serving, top with crumbled feta cheese and garnish with additional fresh mint leaves. Add thin slices of jalapeño if a spicy note is desired.

Notes

  • Use vegan feta to make the salad dairy-free.
  • Adjust the jalapeño quantity or omit it to control spice level.
  • Chilling the salad helps flavors meld but it can be served immediately if desired.
  • Fresh mint enhances the freshness; substitute with basil for a different twist.
