Description
Create stunning white sparkle candy apples with crisp Granny Smith apples dipped in a shimmering, homemade white candy coating. This recipe guides you through making a hard crack sugar shell infused with edible pearl dust for a festive, glittering finish perfect for autumn treats or holiday celebrations.
Ingredients
Scale
Apples
- 6 Granny Smith apples (or use Gala, Fuji, or Honeycrisp as alternatives)
Candy Coating
- 2 cups granulated sugar
- ½ cup light corn syrup
- ¾ cup water
- White gel food coloring (oil-based preferred for bold opacity)
- Edible glitter, pearl dust, or luster dust for decoration
Instructions
- Prepare the Apples: Wash the apples thoroughly under hot water mixed with vinegar to remove any wax coating on the skin. Dry them completely and insert wooden sticks into the stems for easy dipping.
- Make the Candy Coating: In a medium saucepan, combine granulated sugar, light corn syrup, and water. Heat the mixture over medium heat without stirring until it reaches 300°F (hard crack stage) on a candy thermometer.
- Add Color: Once the syrup reaches the hard crack temperature, remove from heat and stir in a few drops of white gel food coloring until the coating is evenly colored and opaque.
- Dip the Apples: Carefully dip each apple into the hot white candy coating, twisting to cover completely. Allow excess syrup to drip off before placing the apple onto a parchment-lined tray.
- Add Sparkle: While the coating is still warm and tacky, dust each apple generously with edible pearl dust or luster dust to create a sparkling effect.
- Cool and Set: Let the coated apples cool at room temperature until the candy coating hardens and sets completely, about 30 minutes to 1 hour.
Notes
- Use a candy thermometer to ensure the syrup reaches the hard crack stage for the perfect crunchy coating.
- Make sure apples are completely dry before dipping to help the candy coating adhere properly.
- Work quickly when dipping and decorating to prevent premature setting of the candy.
- Store candy apples in a cool, dry place and consume within 2 days for best freshness.
