Ingredients
Scale
Pasta
- 8 oz Pasta (Any type like spaghetti or penne)
Vegetables
- 8 oz Mushrooms (Fresh varieties such as cremini or shiitake, sliced)
- 2–3 cloves Garlic (Freshly minced)
- 2 cups Fresh Spinach (Can substitute with kale)
Other Ingredients
- 2 tbsp Olive Oil (Can substitute with butter)
- 1 cup Heavy Cream (Substitute with half-and-half or coconut milk for less calories)
- 1/2 cup Parmesan Cheese (Can use nutritional yeast for a vegan option)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil, add the pasta, and cook until al dente, about 8-10 minutes. Drain well and set aside.
- Sauté mushrooms: Heat olive oil in a skillet over medium heat. Add the sliced mushrooms and cook for 5-7 minutes until golden brown and tender.
- Add garlic: Stir in the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
- Wilt spinach: Add fresh spinach to the skillet and stir until it wilts, about 2-3 minutes.
- Create cream sauce: Pour in the heavy cream and bring the mixture to a gentle simmer. Stir continuously as you add the Parmesan cheese until it melts and the sauce thickens slightly.
- Combine pasta and sauce: Add the drained pasta into the skillet and toss gently to coat all the ingredients evenly with the creamy sauce.
- Season and serve: Season with salt and pepper to taste, mix well, and serve warm for a comforting meal.
Notes
- You can substitute heavy cream with half-and-half or coconut milk for a lighter or dairy-free version.
- Try different types of mushrooms like shiitake or button mushrooms for varied flavors and textures.
- For a vegan option, replace Parmesan cheese with nutritional yeast and use plant-based cream substitutes.
- Serve with a side of crusty bread or a fresh green salad for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop or microwave.
