- 5 cloves garlic, minced
- ½ cup white wine
- 5 oz sun-dried tomatoes, drained and sliced
- 1⅓ cups half and half
- Salt and pepper, to taste
- ½ cup grated parmesan cheese
- 1 large handful baby spinach
Instructions
- Season the shrimp: Pat dry your shrimp using paper towels to remove excess moisture. Season all over with salt, paprika, and Italian herb blend to infuse the shrimp with flavor.
- Sauté the shrimp: Heat a large skillet over medium-high heat and melt butter with olive oil. When the pan is hot, add the seasoned shrimp and cook for 1-2 minutes per side until pink and just cooked through. Remove the shrimp from the pan and set aside on a plate.
- Cook the aromatics: In the same skillet, add diced onion and sauté over medium heat for 3-4 minutes until softened. If the pan gets dry, add a small drizzle of oil. Next, stir in the minced garlic and cook for 30 seconds until fragrant.
- Add liquids and tomatoes: Pour in the white wine and add the sliced sun-dried tomatoes. Sauté this mixture for 1 minute to combine flavors and reduce the wine slightly.
- Make the sauce: Pour in the half and half, season with salt and pepper, and stir in the grated parmesan cheese. Bring the sauce to a simmer and cook for a few minutes, stirring often, until the sauce thickens.
- Wilt spinach and finish: Remove the skillet from heat and add in the baby spinach along with the cooked shrimp. Stir gently to coat the shrimp and wilt the spinach in the warm sauce before serving.
