Description

Hearty and comforting Hamburger Macaroni Soup combines lean ground beef, tender macaroni, and mixed vegetables in a flavorful tomato-beef broth. Ready in just 35 minutes, this easy soup is perfect for a satisfying weeknight meal.

Ingredients

Scale

Meat and Vegetables

  • 1 pound lean ground beef
  • ½ cup onion, diced
  • 3 cloves garlic, minced
  • 1½ cups frozen mixed vegetables

Broth and Seasonings

  • 6 cups beef broth
  • 14 ounce can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon oregano
  • ½ teaspoon dried basil
  • 1 bay leaf

Pasta and Garnish

  • 1½ cups elbow macaroni, uncooked
  • Parmesan cheese, shredded (for topping, optional)

Instructions

  1. Cook beef and onions: In a large pot, add the ground beef and diced onions. Cook over medium heat until the beef is browned and no longer pink. Drain any excess fat, then stir in the minced garlic and cook for about 1 minute until fragrant.
  2. Add broth and seasonings: Pour in the beef broth, diced tomatoes with their juice, tomato paste, Worcestershire sauce, oregano, basil, and add the bay leaf. Stir everything together well. Bring the mixture to a boil, then reduce to a simmer and cook for 5 minutes to develop flavors.
  3. Cook macaroni and vegetables: Add the uncooked elbow macaroni and frozen mixed vegetables to the pot. Stir to combine, then simmer uncovered for 8-10 minutes, or until the macaroni is tender but not mushy.
  4. Season and serve: Remove the bay leaf. Taste and season the soup with salt and freshly ground black pepper as desired. Ladle into bowls and top with shredded Parmesan cheese if using. Serve hot and enjoy!

Notes

  • Use lean ground beef to reduce grease and make the soup healthier.
  • Feel free to substitute mixed frozen vegetables with your favorites like peas, carrots, or corn.
  • You can replace elbow macaroni with any small pasta shape, such as ditalini or small shells.
  • Leftovers keep well refrigerated for up to 3 days and reheat nicely on the stovetop or microwave.
  • For a thicker soup, reduce the amount of broth slightly or simmer longer uncovered.
