Shrimp and Vegetables
- 1 pound raw large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 3 cups fresh baby spinach
Seasonings and Sauce
- 1 teaspoon dried Italian seasoning
- 1 teaspoon paprika
- ½ teaspoon crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- ¾ cup heavy cream
- ¼ cup cream cheese, softened
- ⅓ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese

Instructions
- Preheat the oven. Preheat your oven to 400°F and lightly grease a medium baking dish to prevent sticking and make cleanup easier.
- Sauté garlic, tomatoes, and spinach. Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in halved cherry tomatoes and fresh spinach, cooking until the spinach wilts.
- Make the creamy sauce. To the wilted veggies, add heavy cream, softened cream cheese, grated Parmesan, Italian seasoning, paprika, and crushed red pepper flakes if using. Simmer gently for 3 to 4 minutes until the sauce thickens slightly.
- Prepare the shrimp. Arrange the peeled and deveined shrimp in a single layer within the greased baking dish. Season them evenly with salt and black pepper.
- Combine shrimp and sauce. Pour the thickened cream sauce evenly over the shrimp and gently toss to coat them well.
- Add cheese and bake. Sprinkle shredded mozzarella cheese over the top of the shrimp and sauce. Bake uncovered in the preheated oven for 12 to 15 minutes, or until the shrimp turn pink and the cheese is bubbly and lightly golden.
- Garnish and serve. Remove from the oven, garnish with freshly chopped parsley, and serve hot for a flavorful low-carb meal.

- You can adjust the red pepper flakes for spiciness or omit them if you prefer a milder dish.
- Use fresh shrimp for the best texture and flavor.
- If you want to soften the cheese topping further, cover the dish with foil for the first 8 minutes, then uncover to brown.
