Mediterranean One‑Pot Pasta Recipe

  • Author: Rafael
  • Total Time: 20 minutes
  • Yield: 4 servings 1x
  • Diet: Gluten Free

Description

This Mediterranean One-Pot Pasta is a flavorful and easy-to-make gluten-free dish combining fire-roasted tomatoes, artichoke hearts, black olives, and aromatic spices. Cooked together in one pot, it creates a creamy sauce as the liquid reduces, making it perfect for a quick, wholesome meal.

Ingredients

Scale

Main Ingredients

  • 1 8-ounce package gluten-free pasta (corn/quinoa or chickpea/lentil blend)
  • 3 cups boiling water
  • 1 can vegetable broth (about 1416 ounces)
  • 1 can fire-roasted tomatoes (about 1416 ounces)
  • 1 can artichoke hearts, drained (about 14 ounces)
  • 1 can black olives (about 6 ounces)
  • ½ red (or purple) onion, sliced
  • Fresh thyme (or 1 tsp dried thyme)
  • 1 tsp cumin
  • Salt and black pepper, to taste

Optional Garnishes

  • Parmesan cheese
  • Fresh basil leaves

Instructions

  1. Boil water: Bring 3 cups of water to a rolling boil in a large pot to prepare for cooking the pasta and other ingredients.
  2. Add ingredients to pot: Add the gluten-free pasta, vegetable broth, sliced onions, fire-roasted tomatoes, drained artichoke hearts, black olives, thyme, and cumin to the boiling water in the pot.
  3. Cook and stir: Boil everything over high heat, stirring occasionally to prevent the pasta from sticking to the bottom of the pot or clumping together.
  4. Adjust sauce consistency: As the liquid reduces, it will thicken into a creamy sauce. If it becomes too thick or starts to dry out before the pasta is fully cooked, add hot water in ½ cup increments to maintain a saucy texture.
  5. Check doneness and serve: Once the pasta is tender and cooked through, remove it from the heat and plate immediately to avoid overcooking and mushiness.
  6. Garnish and enjoy: Optionally garnish with freshly chopped basil or a sprinkle of Parmesan cheese for added flavor, then serve hot.

Notes

  • Using gluten-free pasta ensures this dish is suitable for gluten-sensitive diners.
  • Adjust the amount of hot water as needed to get the desired sauce consistency—avoid drying out the pasta.
  • Fresh thyme can be substituted with dried thyme, but fresh provides a brighter flavor.
  • Parmesan cheese adds richness but can be omitted for a dairy-free option.
  • The dish is best served immediately to enjoy optimal texture of the pasta.
