Ingredients
Scale
Main Ingredients
- 1 8-ounce package gluten-free pasta (corn/quinoa or chickpea/lentil blend)
- 3 cups boiling water
- 1 can vegetable broth (about 14–16 ounces)
- 1 can fire-roasted tomatoes (about 14–16 ounces)
- 1 can artichoke hearts, drained (about 14 ounces)
- 1 can black olives (about 6 ounces)
- ½ red (or purple) onion, sliced
- Fresh thyme (or 1 tsp dried thyme)
- 1 tsp cumin
- Salt and black pepper, to taste
Optional Garnishes
- Parmesan cheese
- Fresh basil leaves
Instructions
- Boil water: Bring 3 cups of water to a rolling boil in a large pot to prepare for cooking the pasta and other ingredients.
- Add ingredients to pot: Add the gluten-free pasta, vegetable broth, sliced onions, fire-roasted tomatoes, drained artichoke hearts, black olives, thyme, and cumin to the boiling water in the pot.
- Cook and stir: Boil everything over high heat, stirring occasionally to prevent the pasta from sticking to the bottom of the pot or clumping together.
- Adjust sauce consistency: As the liquid reduces, it will thicken into a creamy sauce. If it becomes too thick or starts to dry out before the pasta is fully cooked, add hot water in ½ cup increments to maintain a saucy texture.
- Check doneness and serve: Once the pasta is tender and cooked through, remove it from the heat and plate immediately to avoid overcooking and mushiness.
- Garnish and enjoy: Optionally garnish with freshly chopped basil or a sprinkle of Parmesan cheese for added flavor, then serve hot.
Notes
- Using gluten-free pasta ensures this dish is suitable for gluten-sensitive diners.
- Adjust the amount of hot water as needed to get the desired sauce consistency—avoid drying out the pasta.
- Fresh thyme can be substituted with dried thyme, but fresh provides a brighter flavor.
- Parmesan cheese adds richness but can be omitted for a dairy-free option.
- The dish is best served immediately to enjoy optimal texture of the pasta.
