- 1 tablespoon olive oil (15 ml)
- Salt and black pepper, to taste
Herbed Yogurt Sauce
- ½ cup plain yogurt (120 g / 4.2 oz)
- 1 tablespoon fresh herbs (parsley, mint, or dill), chopped (8 g / 0.3 oz)
- 1 teaspoon lemon juice (5 ml)
Instructions
- Preheat Grill: Preheat a grill pan or outdoor grill over medium heat to ensure it is hot enough for cooking the zucchini evenly and creating nice char marks.
- Prepare Zucchini: Brush the zucchini slices lightly with olive oil and season both sides with salt and black pepper. This adds flavor and prevents sticking to the grill.
- Grill Zucchini: Place the zucchini slices on the grill and cook for 2–3 minutes per side until they become tender and develop attractive char marks. Remove the zucchini and set aside to cool slightly.
- Make Herbed Yogurt Sauce: In a small bowl, combine plain yogurt, chopped fresh herbs, lemon juice, and season with salt and pepper to taste. Whisk thoroughly to create a smooth and flavorful sauce.
- Warm Tortillas: Warm the tortillas or flatbreads briefly in a dry pan or microwave until they are pliable and easy to fold without cracking.
- Assemble Wraps: Lay out each tortilla and layer with grilled zucchini slices, cooked chickpeas, and crumbled feta cheese evenly across the center of each wrap.
- Add Sauce and Fold: Drizzle a generous amount of the herbed yogurt sauce over the layered ingredients. Fold the wraps tightly, slice if desired, and serve immediately for the best texture and flavor.
